It seems like we are creating a healthy recipes blog here, judging from the posts so far. I think that's good. So, here's my contribution to healthy. I guess it's not as low-cal as it could be, but for alfredo it's pretty darn good. It tastes good, too.
2 C milk (not skim)
1/3 C (3 oz) light cream cheese
2 T flour
1 tsp salt
1 Tbs butter
3 cloves garlic
1 C parmesan cheese
1 lb pasta of your choice (fettucini is traditional, but whatever you like...)
Put milk, cream cheese, flour and salt in the blender and mix until smooth. In a nostick sauce pan, saute garlic in butter over meium high heat for about 30 seconds. Add blender misture. Bring to a simmer and cook until thickened. If I remember right, this part takes a while. Remove from heat and stir in cheese. Let stand for about 10 minutes to thicken completely. It seems like it does thicken quite a bit during this time.
I like to add grilled chicken at this point, to make it feel more like a meal--for Jon's sake, you know :)
I think this would also make an EXCELLENT pizza sauce!
